No dependence on insulin
When sucrose, glucose or other saccharides is taken to the body, they are rapidly digested and absorbed. It causes increment of blood sugar level and secretion of insulin at the same time. On the other hand, maltitol and sorbitol do not induce a rapid rise in blood sugar level, requiring insulin secretion. Thus, food products acceptable for diabetics can readily be prepared by substituting maltitol and sobitol for sacchariferous ingredients in daily foods.
